1 sweet potato
1/2 x avocado
1/2 x small green chilli
1 x Tbsp olive oil
pinch of salt and pepper
2 x Tbsp Coconut Bacon


1. Preheat oven to 200C.
2. Wrap sweet potato in baking paper or foil and put into the oven. Bake for 30 minutes or until sweet potato is soft when knife is inserted.
3. Meanwhile, mash avocado, chilli & olive oil together in a small bowl.
4. Remove sweet potato from the oven & then cut lengthways.
5. Spoon the avocado mixture onto the sweet potato. Top with coconut bacon & season with salt & pepper. Enjoy!
