Grampians Olive Co. introduces their 2018 Olio Nuovo

Grampians Olive Co\'s limited release First Harvest Olio Nuovo (new oil) is cloudy, unfiltered and is picked, immediately cold pressed and then bottled within 24 hours.

We spoke with Grampians Olive Co. producer Greg Mathews about their new season, 2018 Extra Virgin Olive Oil and we learned a great deal.Firstly we wanted to find out more about their intriguing Olio Nuovo:

Grampians Olive Co'slimited release First Harvest Olio Nuovo (new oil) is cloudy, unfiltered and is picked, immediately cold pressed and then bottled within 24 hours.

The oil is a medium flavour intensity and being from the very first harvest/pressing of the season is mostly from green olives the flavour profile displays complex fruitiness, green herbaceous characters and a peppery finish. Normally it takes approximately 7kg of their olives to make 1 litre of oil, this season it has taken around 16kg to make 1 litre of olio nuovo so it's extra special and also extra flavoursome!

If you haven't had the pleasure of tasting freshly pressed olive oil before, you might not be aware that straight off the press and still cloudy, the flavours of the oil are amazingly vibrant and fruity. Oil is best fresh! Heat, light, oxygen and time degrade the quality of olive oil from the moment it is pressed. Olio nuovo is the freshest oil you will get without pressing your own!

Tell us about your 2018 harvest

This year is a bumper harvest for us, helped by good rain at the right time in Spring. Like most farms in harvest mode we are working 7 days a week around the clock get it picked and pressed! Although the hours can be demanding, we have a great little team and find relieving the trees of their heavy load and tasting the freshly pressed oil very satisfying. Our low-touch approach to oil production cold pressed on farm within hours of harvest, unfiltered, unrefined produces unique oil with beautifully balanced flavours.
