Almond Chia Pudding

This creamy pudding is so versatile as it can be paired with almost any fresh or dried fruit plus granola and muesli. Because we have added a banana it can also be made without adding additional sugars into the mix. The best part about using chia seeds in your puddings is that they are high in fiber and full of anti-oxidants not to mention how easy they are to prepare. This recipe only takes about 5 minutes of active preparation making it a perfect option for breakfast when you make it the night before.


cup Black Chia Seeds (you could use white if that is what you have on hand)
1 cup Almond Milk
1 Large & very ripe lady finger banana
tsp Vanilla Extract
1-2tsp Raw honey (optional - if your banana is not as ripe as can be)
1-2 Tbsp Granola or fresh fruit for the top


1. Place the chia seeds into a mixing bowl with a lip or a jug. Empty your almond milk into the bowl and mix well with a spoon ensuring that there are no dry seeds floating on top.
2. In a small bowl mash the banana using a fork. Once the banana is a smooth puree add your vanilla and stir. if you are using honey add it at this stage - be sure to full incorporate it into the banana.
3. Add the banana mixture into the chia seed mixture and stir well.
4. Pour into one or two serving bowls (depending on how hungry you will be the following day). Cover and refrigerate over night (If you would like to eat it on the same day allow it to chill for at least an 40-60 minutes - it will be a bit softer but it is still delicious).
5. Serve with granola, fresh fruit or what ever you like on top.
