Be virtuous with this delightful pudding full of all the good fats. Packed full of nutrients this silky avocado pudding makes a great breakfast or snack.
1 ripe avocado 1 Tbsp chia seeds 1/2 cup coconut milk (more if needed) Preferred sweetener (as much or as little as you like) Pinch salt Pink Muesli
1. Mix chia seeds into coconut milk and leave to bloom for an hour. 2. Mash avocado well and combine with salt and sweetener. 3. Stir the chia seeds into the avocado mixture and top with a handful of Pink Muesli.
