Curried Rice Salad

A delightful salad that can be made ahead of time - making BBQ\'s even easier and office lunch a breeze. Make the dressing the night before for an even more intense flavour!


2 cups chilled cooked long grain, long grain brown or Low GI doongara rice
1 green pepper (finely chopped)
3 Tbsp raisins or sultanas
1 green apple
1 red apple
3 shallots (chopped)

cupOlive oil
cup white vinegar
1 garlic clove (crushed)
1 Tbsp sugar
1 dessertspoon curry powder
Salt and pepper


1. Combine all salad ingredients.
2. To make the dressing add all of the dressing ingredients into a glass jar, put the lid on and place the jar in the fridge.
3. Just before serving shake the jar well, pour over the rice salad and toss through gently.
