Honey and Garlic Roast Lamb Leg

Who doesn't love a roast? Things are cooling down and ovens around the country are firing up. A well cooked roast lamb is hard to beat, this one smothered in the goodness of garlic and honey, is a delicious crowd pleaser. 


1 x Leg of lamb (estimate around 100 - 200 g per person, depending on what else you are serving)

Olive Oil



Fresh Rosemary


Combine in a bowl a generous slosh of olive oil, a few crushed cloves of garlic, a couple of big spoons of honey, and lots of freshly chopped/ripped rosemary. Season with a bit of salt and pepper, and then mix it all together. Place your lamb in your favourite roasting try and pour the sticky sauce over the lamb and get your hands in and rub it all over the lamb. Sticky bit done!

Start the oven at a higher temperate e.g. 200c and cool lamb for 10 or 15 minutes, to glue that sticky garlicy goodness on, and give the skin a bit of a sizzle. Then drop the oven to 180c for the remainder of the cooking time.
