Roasted Cauliflower and Cashew Parmesan Bites

These are an awesome snack food, delicious sprinkled over any savoury dish, as an accompaniment to your main meal or just eaten on their own! Healthy & delicious - our two favourite words!


1 x fresh cauliflower
3 x cloves garlic
x brown onion
5 x sprigs fresh thyme (2tsp for dried thyme)
extra virgin olive oil
2 tbs Cashew Parmesan


1. Preheat oven to 200c. Wash and cut away cauliflower florets from the stem. Carefully slice cauliflower florets from the base to the tip so that they are roughly half a centimetre thick. Gently place down flat onto an oven tray.

2. Once all cauliflower pieces are laid down, scatter whole garlic cloves around tray. Roughly chop onion into segments and scatter around tray also. Sprinkle with sprigs of time, and a drizzle of olive oil and cracked salt.

3. Roast in the oven for 20 minutes, or until starting to turn golden. Remove from the oven and sprinkle over Cashew Parmesan. Return to the oven and roast for another 3 minutes. Remove from oven and enjoy!
