250g Medjool dates (chopped)

1 1/4 cups water

125g butter (chopped)

1tsp ground ginger

1tsp bicarb soda

1/2 cup raw sugar

2 eggs

1 & 1/4 cups SR Flour


1. Put dates, water, butter and ginger in a large flat pie dish (approx 23cm across and 5cm high) and microwave on high until butter is melted (maybe 1-2 mins). Stir in soda and cool slightly.

2. Stir in sugar, lightly beaten eggs, sifted flour and mix well.

3. Cover and microwave on high for 14 mins. Stand covered for 2 mins.

4.. Make the sauce by boiling together 1 cup cream, 1/2 cup brown sugar, 1 tsp butter and 2 pinches of salt for about 3-4 mins.

5. Top each slice with a handful of toasted pecans and serve with salted caramel sauce and double cream or icecream.

Nb. Slabs of this are also great for school lunch boxes
